 Sometimes called "Japanese pancakes" or "Japanese pizza", okonomiyaki is batter cooked on a hot griddle. "Okonomiyaki" literally means "as you like in" in reference to using whatever ingrediants you like.

Ukyo Kuonji is, of course, an okonomiyaki chef. Ukyo is from the Kansai area of Japan (Osaka, Kyoto, Kobe), and this is where the best okonomiyaki is traditionally thought to come from.
